Brass servingware, colourful accents inspired by Indian markets, and the sounds of regional music lend the restaurant an atmosphere that feels closer to a bustling food street than a conventional hotel brunch.
At Radisson Blu Plaza Delhi Airport, Sundays this season are being transformed into a culinary tour across India with “Flavours of India”, a specially curated brunch series celebrating the country’s diverse street food traditions. Spread across four consecutive Sundays — May 17, 24, 31 and June 7 — the experience takes diners through the flavours of North, South, West, and East India, with each edition focusing on a distinct regional food culture.
The concept blends the nostalgia and familiarity of Indian street food with the sophistication of a luxury dining experience, bringing together live cooking stations, regional beverages, traditional recipes, and immersive presentation.
A brunch inspired by India’s streets
Unlike a standard buffet spread, the brunch unfolds like a regional food trail. Guests move between interactive counters where chefs prepare dishes fresh to order, recreating the spontaneity and energy associated with Indian street-side dining.
At one station, smoky kebabs and tandoori snacks emerge fresh from the grill, while nearby counters serve chaats layered with chutneys and spices. Elsewhere, chefs prepare regional staples reflecting the flavours of the South, West, and East, allowing diners to experience a broad spectrum of Indian cuisine in a single afternoon.
The décor and ambience evolve with the regional themes as well, with music, presentation styles, and visual elements reflecting the culinary identity of each Sunday’s showcase.
“With ‘Flavours of India’, we wanted to bring the authenticity and emotional connect of Indian street food into a more elevated dining experience,” said Chef Gurneet Grover. “Street food in India is not just about taste — it is linked to memories, travel, childhood experiences, and regional identity. We wanted guests to relive those emotions while enjoying the comfort and refinement of a luxury brunch.”
The series begins with the bold and indulgent flavours of North India before moving into the lighter and aromatic dishes of the South. The Western edition highlights vibrant flavours and snack culture, while the final brunch explores the subtler spice profiles and dessert-rich traditions associated with Eastern India.
“Every region has its own rhythm of cooking and its own culinary personality,” Chef Gurneet said. “The idea was not to present Indian cuisine as one uniform category, but to celebrate how diverse and layered it truly is.”
More than familiar favourites
While the brunch features recognisable street food staples, the menu also attempts to spotlight preparations and flavour combinations that are less commonly seen in mainstream hotel buffets.
Chefs focus on live preparation and customisation, allowing guests to interact directly with the cooking process and personalise flavours according to their preferences. Regional beverages have also been specially curated to complement the food and deepen the sense of authenticity.
“We wanted every counter to feel alive and interactive, similar to the atmosphere you experience while walking through Indian food streets,” Chef Gurneet said. “There is a certain warmth and immediacy in street food culture — the sound of food cooking, the aromas, the conversations with vendors — and we tried to recreate that energy here.”
The experience also places emphasis on storytelling through food, with each Sunday acting as a narrative centred on a different region’s culinary heritage.
“Indian street food reflects local history, climate, ingredients, and traditions,” Chef Gurneet added. “Behind every dish, there is a cultural story. We wanted diners to experience not just flavours, but also the diversity and richness of India’s food heritage.”
An immersive culinary experience
The brunch encourages diners to move slowly through the experience rather than rush through a meal. Guests can linger between live stations, sample multiple regional specialities, and engage with chefs about ingredients and cooking techniques.
The rotating format also ensures that every Sunday offers a completely new culinary landscape, giving diners a reason to return week after week.
Blending the vibrancy of India’s street food culture with five-star hospitality, “Flavours of India” transforms the conventional brunch into something more experiential — part food festival, part cultural exploration.
“Food has the ability to transport people instantly to places and memories,” Chef Gurneet said. “With this brunch, we wanted guests to feel that sense of familiarity and discovery at the same time — where every dish reminds them of something personal while also introducing them to flavours from different parts of the country.”
