Experience the traditional and delectable flavours of Rome at this lush restaurant in the heart of the capital

Italian cuisine has made a strong mark in the Indian food scenario and has become the most popular cuisine for diners of all age groups. We recently had the opportunity to move ahead of the regular pastas and pizzas, as we were celebrating the flavours of Roman cuisine at Sevilla, a beautiful restaurant at The Claridges Hotel.

Chef Pierluigi Gallo was invited to treat Delhi connoisseurs with his native Roman dishes. He focused on the traditional ways of cooking native Roman dishes, which he reinforced as traditional Italian food at its best.

Chef Pierluigi Gallo hails from Rome and gives credit to his family for his culinary expertise. “I have gained experience in cooking through my family-run restaurants and have my grandmother’s blessings, who taught me to cook from the heart,” said Gallo while trying to converse in English.
Keeping the simplicity and freshness of Roman traditional food intact, with a generous use of herbs and mildly smoked vegetables, he curated a special menu which had a fair choice of vegeterian and non-vegetarian options.

We began our meal with delicious soups like Cheese and Egg Buttons in roasted fish stock or green tomato extract, lemon basil and cod. Chef Gallo prepared his signature starters like Salmon Salad with cacciatore sauce, octopus, beans and onion sorbet in sweet and sour sauce, lamb tartare, truffle and Grilled Lamb Mayonnaise, low-tempered egg, bacon, potato foam, and cocoa to name a few.

Chef Gallo also came up with a brilliant ravioli with scampi lemon, pink pepper and tarragon, Ricotta Gnocchi with mint and cherry tomatoes confit, Provola Eggplant Tortelli, roasted tomato and fettuccine.

The main course had braised lamb chop, chickpea mayonnaise, potato mille-feuille, Amarena Laccata Grouper, fried alioli sauce, sour cherry yoghurt, duck breast glazed with apple and onion extract, almond ice-cream and sour broccoli, lobster croquettes, pea sauce, ice-cold watermelon and roast potatoes. The sea bass stole the show with its crispiness and subtle flavours. The duck was truly a delight and what made it special was the almond ice cream on its side.

We rounded off our sumptuous meal with a selection of desserts like ricotta, creamy chocolate, raspberries, coconut white chocolate and passion fruit.
For an exclusive occasion, this restaurant is perfect with its chic décor that offers both indoor and outdoor seating. Here the Mediterranean cuisine draws its influence from Romania, Morocco and Italy, and is paired beautifully with a select list of exclusive wines. With the soothing sound of rippling water from the indoor fountain at the centre of the restaurant — reminiscent of the famed Maria Lusia Park — time spent at Sevilla is an ode to love, an ode to romance and an ode to happy moments!
